A delightful fusion of crispy, golden chicken, savory cheeses, and zesty tomato sauce that elevates traditional Italian comfort food.

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 large eggs
  • 2 tbsp all-purpose flour (more if needed)
  • 1 cup panko breadcrumbs (more if needed)
  • ¾ cup grated Parmesan cheese, divided
  • ½ cup olive oil, for frying
  • ½ cup prepared tomato sauce
  • ¼ cup fresh mozzarella, cubed
  • ½ cup provolone cheese, grated
  • ¼ cup fresh basil, chopped
  • 2 tsp olive oil, for drizzling

Instructions

  1. Pound and season chicken breasts to ½-inch thickness and season with salt and pepper, then dredge in flour.
  2. Beat the eggs in one bowl and mix panko and half of the grated Parmesan in another bowl. Dip chicken in egg, then breadcrumb mixture, and let rest.
  3. Heat olive oil in a skillet and fry chicken for about 2 minutes on each side until golden brown.
  4. Assemble the chicken in a baking dish, adding tomato sauce, mozzarella, remaining Parmesan, provolone, and basil. Drizzle with olive oil.
  5. Preheat oven to 230°C (450°F) and bake chicken for 15–20 minutes until cheese is bubbly and golden.
  6. Allow the dish to rest for a few minutes before serving hot, garnished with fresh basil.

Notes

For best results, use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (75°C).
