Greek chicken bowls are a delightful harmony of flavors and textures, embodying the essence of Mediterranean cuisine, packed with protein, fiber, and fresh veggies.

Ingredients

  • 2 Chicken breasts
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 Cucumber, chopped
  • 2 Tomatoes, diced
  • 1 Red onion, sliced
  • 1 Bell pepper, diced
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Tzatziki sauce
  • 1 cup Quinoa or rice

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Add the chicken breast and coat it well. Let it marinate for a minimum of 30 minutes.
  2. Grill or cook the chicken until it reaches an internal temperature of 165°F (75°C).
  3. Prepare quinoa or rice according to the package instructions.
  4. Chop fresh veggies: cucumber, tomato, red onion, and bell pepper.
  5. Assemble bowls with quinoa or rice at the bottom, followed by sliced chicken, fresh veggies, and crumbled feta cheese.
  6. Top with a dollop of tzatziki sauce.
  7. Serve immediately or store for meal prep in airtight containers.

Notes

Feel free to swap out veggies based on your preferences. Leftovers can be stored separately for about 3 to 4 days.
