A quick and flavorful Greek chicken marinade that’s perfect for busy weeknights or laid-back gatherings.

Ingredients

  • 1.5 lbs chicken thighs (boneless and skinless)
  • ½ cup plain Greek yogurt
  • Juice of ½ a lemon
  • 3 tbsp olive oil
  • 1.5 tsp salt
  • 3 cloves garlic (pressed)
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • ¼ tsp red pepper flakes
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. In a large 9×13″ baking dish, add the chicken thighs.
  2. Top the chicken with Greek yogurt, lemon juice, olive oil, salt, garlic, black pepper, cumin, paprika, onion powder, red pepper flakes, and parsley.
  3. Mix everything together well, ensuring each piece of chicken is thoroughly coated.
  4. Arrange the coated chicken in a single layer in the dish.
  5. Cover tightly with plastic wrap and marinate in the fridge for up to 12 hours (or at least 5 minutes).
  6. Preheat your oven to 450°F.
  7. Remove the plastic wrap and bake for about 25-30 minutes until the internal temperature reaches 165°F.
  8. Turn the oven to broil for about 3 minutes to achieve crispy edges.
  9. Allow the chicken to rest for about 5 minutes before serving.

Notes

For best flavor, marinate overnight. This marinade can also work with other proteins like shrimp or salmon.
