Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • Lemon zest for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper until combined.
  3. Form the mixture into meatballs about 1 inch in diameter and arrange them on a baking sheet.
  4. Bake in the preheated oven for 20-25 minutes until cooked through and browned.
  5. While the meatballs bake, bring chicken broth to a full boil in a large pot.
  6. Add orzo and cook according to package instructions until al dente.
  7. Drain the orzo and return it to the pot.
  8. Stir in lemon juice and season with salt and pepper.
  9. Serve the meatballs over a bed of lemon orzo, garnished with lemon zest and parsley if desired.

Notes

To keep meatballs tender, avoid overmixing. For added flavor, include fresh herbs or red pepper flakes.
