A delightful and moist banana bread made with Greek yogurt, perfect for breakfast or snacks.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the mashed bananas, Greek yogurt, eggs, and vanilla extract until smooth.
  3. Combine the dry ingredients: baking soda, baking powder, salt, cinnamon, and flour in another bowl.
  4. Gradually add the dry mixture to the banana mixture, stirring until just combined.
  5. Fold in walnuts or chocolate chips if you’re using them.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for optimal sweetness and texture. Store in an airtight container for up to 3 days or freeze slices for longer storage.
