  • 1 cup Greek yogurt
  • ¼ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Whisk the dry ingredients: In a small bowl, combine the flour, sugar, baking powder, and salt.
  2. Mix the wet ingredients: In a medium bowl, combine the Greek yogurt, milk, eggs, vanilla extract, and melted butter. Stir until smooth.
  3. Combine wet and dry: Gradually add the dry mixture to the wet mixture, using a whisk. Do not overmix.
  4. Heat the pan: Preheat a large nonstick skillet over medium heat for about 60-90 seconds, lightly greasing it with oil or butter.
  5. Cook the pancakes: Pour ¼ cup of batter onto the hot skillet. Cook for about 2 minutes until edges look dry and bubbles form.
  6. Flip and final cook: Carefully flip the pancake and cook for an additional 1-2 minutes until both sides are golden brown.
  7. Repeat: Continue with the remaining batter, adding more grease to the pan as necessary.
  8. Serve: Enjoy your pancakes warm, topped with butter, maple syrup, or your favorite toppings.

For pancake perfection, use room temperature eggs and yogurt. Ensure your pan is adequately heated before adding the batter.
