Deliciously fluffy Greek Yogurt Pancakes that are protein-packed and perfect for breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar (optional)
  • 3/4 cup Greek yogurt (plain or flavored)
  • 1/4 cup milk (adjust for desired consistency)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
  2. In another bowl, whisk the Greek yogurt, milk, eggs, and vanilla extract until it’s a smooth mixture.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently to mix until just combined.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges appear set.
  6. Flip them over and cook for another 1-2 minutes until they’re golden brown.
  7. Serve warm and stack them high with your favorite toppings!

Notes

For a dairy-free option, use dairy-free yogurt and nut milk or oat milk.
