A delightful dish featuring juicy grilled chicken, crispy sweet potato fries, and a refreshing avocado salsa, perfect for weeknight dinners or casual gatherings.

  • 1 chicken breast, sliced into tenders
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or chopped fresh parsley
  • Salt & pepper to taste
  • 1 medium sweet potato, peeled & cut into fries
  • 1/2 tsp smoked paprika
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1 tbsp fresh cilantro, chopped
  • 1 tbsp lime juice
  • 2 tbsp ranch or Greek yogurt-based herb sauce (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the fries: Toss the sweet potato sticks in olive oil, smoked paprika, and a pinch of salt. Spread them out on a baking sheet and roast for 25–30 minutes until crisp and golden, turning halfway through.
  3. Cook the chicken: Season the chicken tenders with garlic powder, Italian seasoning (or parsley), salt, and pepper. Heat olive oil in a grill pan or skillet over medium-high heat. Cook the chicken for about 3–4 minutes per side until golden and juicy.
  4. Make the avocado salsa: In a bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, cilantro, lime juice, salt, and pepper. Gently toss to combine.
  5. Assemble the dish: Layer the grilled chicken, crispy sweet potato fries, and avocado salsa on a plate. If desired, serve a dip of ranch or Greek yogurt-based herb sauce on the side.

Notes

Substitute regular potatoes for sweet potatoes or different herbs for the chicken seasoning to tailor the dish to your taste.
