Juicy chicken breasts infused with zesty lemon and aromatic garlic, perfect for summer barbecues.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon

Instructions

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon zest until well combined.
  2. Place the chicken breasts in a zip-top bag, pour the marinade over them, and seal the bag. Make sure the chicken is well-coated. Refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
  3. Heat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  4. Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken on the grill and cook for 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C).
  5. Once grilled, remove the chicken from the grill and let it rest for 5 minutes before slicing or serving.

Notes

Add crushed red pepper flakes for a spicy kick. Substitute thyme for rosemary or use lime juice instead of lemon.
