A delightful one-dish dinner combining layers of ground chicken, rich marinara, and two kinds of cheese, perfect for busy weeknights.

  • 1 tablespoon unsalted butter
  • 1 cup panko breadcrumbs
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon Italian seasoning
  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 teaspoon salt, divided in half
  • 4 cloves garlic, roughly chopped
  • 2 pounds ground chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 770 mL marinara sauce
  • 1 cup grated parmesan cheese
  • 2 sprigs basil
  • to 2 cups shredded mozzarella cheese

Instructions

  1. Begin by melting the unsalted butter in a skillet over medium heat. Once melted, stir in the panko breadcrumbs along with ¼ teaspoon of salt, garlic powder, onion powder, and Italian seasoning. Cook this mixture until it becomes golden, roughly 3-4 minutes. Set it aside once done.
  2. In a large pan, heat the oil over medium heat. Add the diced onion and sauté until it turns translucent, about 5 minutes. Following that, add the roughly chopped garlic, cooking for another minute until fragrant.
  3. In a mixing bowl, combine the ground chicken with half a teaspoon of salt, garlic powder, onion powder, and oregano. Fold in the sautéed onion and garlic mixture until well combined.
  4. Now, mix in your marinara sauce to the chicken mixture until everything is evenly coated.
  5. In a greased baking dish, layer half of the chicken mixture at the bottom. Sprinkle it with parmesan cheese, followed by half of the crispy breadcrumbs and some fresh basil.
  6. Add the remaining chicken mixture, top it off with mozzarella cheese, and finish with the remaining breadcrumbs.
  7. Preheat your oven to 375°F (190°C) and bake for 30-35 minutes, or until the cheese is melted and bubbly.
  8. Once baked, let it cool slightly before serving to enhance flavor and texture.

Notes

Try adding a splash of red wine while sautéing onions and garlic for a richer flavor. Additional panko can be added for extra crunch.
