A delightful and nutritious soup featuring ground turkey, potatoes, and kale, perfect for a cozy meal.

Ingredients

  • 1 pound ground turkey
  • 2 cups diced potatoes
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the ground turkey, breaking it up with a spoon, and cook until it’s browned.
  4. Add in the diced potatoes and pour in the broth. Bring everything to a boil.
  5. Once boiling, reduce the heat and stir in the chopped kale and dried thyme.
  6. Allow the soup to simmer for 20-25 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste.
  8. Serve warm, perhaps with a sprinkle of Parmesan or a crusty piece of bread on the side.

Notes

For a creamier soup, blend a portion before serving. Add a splash of lemon juice or vinegar for brightness.
