A comforting and hearty casserole that combines the zesty flavors of tacos with the simplicity of a one-dish meal.

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cooked rice or quinoa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground turkey until it’s browned. Drain any excess fat.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and cooked rice or quinoa to the skillet. Stir well and heat until everything is hot.
  4. Pour the mixture into a greased casserole dish.
  5. Spread salsa over the top of the casserole and sprinkle with shredded cheese.
  6. Bake for 25 to 30 minutes, or until it’s bubbly and the cheese has fully melted.
  7. Garnish with fresh cilantro before serving hot.

Notes

Let the casserole rest for a few minutes after baking for easier serving. This dish pairs well with tortilla chips or avocado salad.
