Healthy Baked Chicken Parmesan

A lightened-up version of the classic Italian chicken parmesan that’s easy to prepare and packed with flavor.

Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs or panko
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 large egg
  • 1 cup low-sodium marinara sauce
  • ½ cup part-skim mozzarella cheese
  • 1 tablespoon olive oil spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by placing the breasts between two sheets of plastic wrap and pounding them to an even thickness of about ½ inch.
  3. Mix the coating: In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir until combined.
  4. Whisk the egg in a separate bowl. Dip each chicken breast into the egg first, then coat evenly with the breadcrumb mixture, pressing to ensure it sticks.
  5. Arrange the chicken on a baking sheet lined with parchment paper. Lightly spray each piece with olive oil.
  6. Bake for 20 to 25 minutes, or until the chicken is cooked through and has a golden brown exterior.
  7. Add marinara: Remove the chicken from the oven, spoon marinara sauce over each piece, and top with mozzarella cheese.
  8. Final bake: Return to the oven for an additional 5 to 7 minutes, or until the cheese is melted and bubbly.

Notes

Serve garnished with fresh basil or extra Parmesan. Pairs well with whole wheat pasta or a crisp salad.
