2 large boneless, skinless chicken breasts
1 cup whole wheat breadcrumbs or panko
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
1 large egg
1 cup low-sodium marinara sauce
½ cup part-skim mozzarella cheese
1 tablespoon olive oil spray
Instructions
Preheat your oven to 400°F (200°C).
Prepare the chicken by placing the breasts between two sheets of plastic wrap and pounding them to an even thickness of about ½ inch.
Mix the coating: In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Stir until combined.
Whisk the egg in a separate bowl. Dip each chicken breast into the egg first, then coat evenly with the breadcrumb mixture, pressing to ensure it sticks.
Arrange the chicken on a baking sheet lined with parchment paper. Lightly spray each piece with olive oil.
Bake for 20 to 25 minutes, or until the chicken is cooked through and has a golden brown exterior.
Add marinara: Remove the chicken from the oven, spoon marinara sauce over each piece, and top with mozzarella cheese.
Final bake: Return to the oven for an additional 5 to 7 minutes, or until the cheese is melted and bubbly.
Notes
Serve garnished with fresh basil or extra Parmesan. Pairs well with whole wheat pasta or a crisp salad.
