  • 1 cup oatmeal
  • 1/2 cup chocolate chips
  • 1/2 cup yogurt or applesauce
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Add the yogurt or applesauce and eggs to the mashed bananas, mixing until well combined.
  4. Whisk together the oatmeal, baking powder, cinnamon, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips, ensuring they’re evenly distributed.
  7. Pour the batter into the muffin tin, filling each cup two-thirds full.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool briefly in the tin before transferring to a wire rack. Enjoy as a snack or breakfast!
