Delicious and healthy muffins made with ripe bananas and oats, perfect for breakfast or snacks.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Mash the ripe bananas in a large bowl. Add the rolled oats, milk, and honey (or maple syrup), then mix in the baking powder, baking soda, cinnamon, and salt until well combined.
  3. Fold in the walnuts or chocolate chips if desired.
  4. Divide the muffin batter evenly among the prepared muffin cups.
  5. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the muffins to cool for a few minutes before removing them from the tin.

Notes

For a sweeter taste, use very ripe bananas. Store in an airtight container for up to three days or freeze for up to three months.
