Delicious and wholesome pastries made with whole wheat and mixed berries, perfect for brunch or a snack.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 egg (optional for brushing)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the whole wheat flour, baking powder, and a pinch of salt.
  3. In a separate bowl, blend together the Greek yogurt, honey or maple syrup, and vanilla extract until fully combined.
  4. Gradually mix the dry ingredients into the wet mixture, stirring until a dough forms.
  5. Gently fold in the mixed berries, being careful not to crush them.
  6. Roll out the dough on a floured surface and cut it into your desired shapes.
  7. Place the shaped pastries on a baking sheet. If you’d like a golden finish, brush them lightly with a beaten egg.
  8. Bake for 15-20 minutes, until they turn golden brown.
  9. Allow the pastries to cool before digging in.

Notes

These pastries can be served warm, topped with Greek yogurt or powdered sugar. Store in an airtight container for up to 2 days at room temperature or refrigerate for up to a week.
