Delightful and guilt-free pastries filled with vibrant berries, perfect for breakfast or a wholesome snack.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 egg (optional, for egg wash)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the whole wheat flour, almond flour, baking powder, and salt until blended.
  3. In another bowl, mix the honey (or maple syrup), Greek yogurt, and melted coconut oil until smooth.
  4. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined.
  5. Carefully fold in the mixed berries, taking care not to break them.
  6. On a lightly floured surface, roll out the dough and cut into your favorite pastry shapes.
  7. Place the pastries on a baking sheet lined with parchment paper.
  8. If you wish, brush the tops with a beaten egg for a lovely golden finish.
  9. Bake for 15-20 minutes, or until the pastries turn golden brown.
  10. Allow to cool slightly before serving for the best texture.

Notes

For a vegan option, swap honey for maple syrup. Store leftovers in an airtight container in the fridge for up to three days.
