A delightful breakfast casserole packed with protein and vegetables, perfect for busy mornings or relaxed weekend brunches.

  • 1 cup spinach, chopped
  • 1 cup bell peppers, diced
  • 1 cup mushrooms, sliced
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs and milk in a large bowl until well combined.
  3. Stir in the spinach, bell peppers, mushrooms, shredded cheese, salt, pepper, and garlic powder, mixing thoroughly.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 25-30 minutes or until the eggs are fully set.
  6. Allow to cool for a few minutes before slicing and serving.

Notes
