Delicious and nutritious muffins made with ripe bananas and Greek yogurt, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mash the ripe bananas until they’re nice and smooth.
  3. Whisk in the Greek yogurt, honey, egg, and vanilla until well combined.
  4. Mix together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet mixture, being careful not to overmix.
  6. Fold in chocolate chips or nuts, if desired.
  7. Fill muffin cups evenly with the batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Allow the muffins to cool slightly before enjoying them warm!

Notes

Use overripe bananas for maximum sweetness and moisture. Avoid overmixing for light and fluffy muffins.
