  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Optional: chocolate chips or nuts for added texture

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly spray with cooking spray.
  2. Combine the pumpkin puree, Greek yogurt, honey (or maple syrup), and eggs in a medium bowl. Mix until smooth and creamy.
  3. Whisk together the whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt in another bowl.
  4. Fold the dry mixture into the wet ingredients until just combined; be careful not to overmix. If adding chocolate chips or nuts, fold them in now.
  5. Divide the batter evenly into the muffin cups, filling them about 3/4 full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool on a rack before serving.

Notes

For extra moisture, you can add a tablespoon of milk if the batter seems too thick. Check the freshness of your baking powder and baking soda for optimal rising.
