Wholesome and customizable breakfast bars perfect for busy mornings.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup mashed bananas or applesauce
  • 1/2 cup almond butter or peanut butter
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: nuts, seeds, dried fruit, or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, cinnamon, and salt.
  3. In another bowl, mix the honey (or maple syrup), mashed bananas (or applesauce), almond butter (or peanut butter), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until completely combined.
  5. If desired, fold in nuts, seeds, dried fruit, or chocolate chips for added texture and flavor.
  6. Spread the mixture evenly into the prepared baking dish and press down firmly to compact.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Allow to cool completely in the pan before cutting into bars.
  9. Store in an airtight container.

Notes

These bars freeze wonderfully and can be reheated easily.
