Ingredients

  • 1 cup almond milk (or other plant-based milk)
  • 1 cup strawberries, chopped
  • 1 tablespoon maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 2 tablespoons dairy-free cream cheese (or peanut butter)
  • 1 tablespoon chia seeds
  • Toppings: sliced strawberries, almond slivers, or coconut flakes

Instructions

  1. In a medium bowl, stir together rolled oats, almond milk, chia seeds, and vanilla extract until even.
  2. Add dairy-free cream cheese and maple syrup (if using) and mix until creamy.
  3. Gently fold in chopped strawberries.
  4. Divide the mixture into jars or containers, seal, and refrigerate overnight (at least 6 hours).
  5. In the morning, stir and top with additional sliced strawberries, almond slivers, or coconut flakes before enjoying cold.

Notes

Store in airtight jars or containers for up to 4 days. Adjust sweetness with maple syrup or omit for a sugar-free option.
