  • 1 cup diced fresh strawberries
  • 1/4 cup maple syrup or honey
  • 1/4 cup almond butter or peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. Combine the rolled oats, baking powder, and salt in a large mixing bowl.
  3. Mix together the almond butter, maple syrup, and vanilla extract in a separate bowl until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until fully combined.
  5. Fold in the diced strawberries, ensuring they’re evenly distributed.
  6. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  7. Bake for 20-25 minutes or until the top is golden brown and set.
