  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Fresh strawberries, sliced
  • Maple syrup
  • Whipped cream
  • Crispy bacon (optional)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the buttermilk, egg, and melted butter until well combined.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined—remember, a few lumps are totally fine!
  4. Preheat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
  5. Pour about 1/4 cup of batter into the skillet, using a spatula to mold it into a heart shape. Cook until bubbles appear on the surface, then carefully flip and cook until golden brown.
  6. Stack the pancakes on a plate and serve warm with fresh strawberries, syrup, and whipped cream. If you like, add crispy bacon on the side for a savory touch.

Notes

For extra flavor, consider adding a teaspoon of vanilla extract or a pinch of cinnamon to the batter. These pancakes freeze well; lay them out on a baking sheet to freeze individually, then store in a zip-top bag for up to 2 months.
