A delicious and versatile breakfast burrito filled with crispy bacon, hash browns, and scrambled eggs, perfect for family brunches or meal prep.

  • 2 cups Frozen Hash Browns (or fresh potatoes)
  • 6 large Eggs (or scrambled tofu for vegan option)
  • 1/4 cup Milk (or almond milk)
  • 2 tablespoons Unsalted Butter (or olive oil)
  • 1 teaspoon Kosher Salt (or sea salt)
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 4 large Flour Tortillas (or whole-wheat tortillas for healthier option)
  • 1 cup Shredded Cheddar (or vegan cheese)
  • 1 ripe Avocado (or smashed avocado/guacamole)

Instructions

  1. In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.
  2. In the same skillet, cook the frozen hash browns until golden brown and crispy (about 5-7 minutes). Set aside.
  3. Whisk together eggs, milk, salt, and pepper in a bowl until combined.
  4. Melt butter in the skillet over low heat, then pour in the egg mixture and stir gently until fluffy and just set.
  5. Lay a tortilla flat on a plate and layer with hash browns, scrambled eggs, crispy bacon, shredded cheddar, and avocado. Wrap tightly.
  6. Repeat with remaining tortillas. Optionally, toast burritos in the skillet until golden and crispy.

Notes

For extra creaminess, add cream cheese or sour cream. Fresh herbs like cilantro or chives can enhance flavor. Add jalapeños for spiciness.
