Delightful high protein blueberry muffins, perfect for a nutritious breakfast or snack.

  • 1 cup almond flour
  • 1 cup oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/2 cup Greek yogurt
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large mixing bowl, combine almond flour, oats, protein powder, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together Greek yogurt, applesauce, eggs, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Avoid overmixing to keep the muffins light.
  5. Carefully fold in the blueberries, ensuring they remain whole and plump.
  6. Evenly divide the batter among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
