A nutritious and filling breakfast burrito loaded with protein-rich ingredients, perfect for busy mornings and meal prep.

  • 1 breakfast sausage
  • 4 large eggs
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste
  • Cooking oil or spray

Instructions

  1. In a skillet, heat your cooking oil over medium heat and cook the breakfast sausage until browned. Remove it from the pan and set it aside.
  2. Crack in the eggs into the same skillet and scramble until fully cooked, seasoning with salt and pepper.
  3. Add the drained and rinsed black beans along with the cooked sausage back into the skillet with the scrambled eggs. Stir well to combine.
  4. Warm the tortillas in a pan or microwave for a few seconds to make them pliable.
  5. Spoon a generous portion of the egg mixture onto each tortilla, followed by a sprinkle of shredded cheese.
  6. Carefully roll each tortilla tightly to keep all the filling inside.
  7. For meal prep, wrap each burrito separately in foil or plastic wrap and store them in a freezer bag.
  8. To enjoy, microwave the burrito for a few minutes until heated through.
