Delicious, hearty breakfast burritos packed with protein, perfect for busy mornings.

Ingredients

Scale
  • 8 large flour tortillas
  • 8 eggs
  • 1 pound lean ground beef
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 2 tablespoons chopped fresh parsley or cilantro (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and season with salt and pepper.
  2. In a separate nonstick pan, scramble the eggs over medium-low heat until they’re fluffy and cooked through.
  3. Using the same skillet from the beef, add the diced red bell pepper and red onion, sautéing until they begin to soften.
  4. Lay out the tortillas on a clean surface. Evenly divide the scrambled eggs, ground beef, sautéed veggies, cheddar cheese, and optional herbs among the tortillas.
  5. Fold the sides of each tortilla in and roll them tightly to form burritos.
  6. Wrap each burrito in parchment paper and then in foil, or place them into freezer-safe bags.
  7. Freeze the burritos for up to three months. To reheat, microwave each burrito for 2–3 minutes or bake them at 375°F for 20–25 minutes until heated through.

Notes

These burritos are versatile; serve with salsa or avocado. Store in the freezer for freshness.
