  • 2 cups oats
  • 1 cup blueberries
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish to prevent sticking.
  2. Combine the cottage cheese, oats, blueberries, lemon juice, lemon zest, eggs, honey, vanilla extract, baking powder, and salt in a large bowl. Stir until everything is well mixed.
