A wholesome twist on breakfast, these High Protein McGriddle Bites are packed with protein and flavor, perfect for a quick snack or a hearty meal.

  • 1 lb breakfast sausage (cooked and cooled)
  • 2 cups protein pancake mix (such as Kodiak Cakes)
  • 1.5 cups water
  • 1/4 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)

Instructions

  1. Preheat your oven to 400°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or butter.
  2. In a large mixing bowl, prepare the pancake batter by combining the pancake mix with water until smooth.
  3. Add the cooled breakfast sausage to the batter; it’s essential that it’s completely cooled to avoid heating the batter too much.
  4. Gently fold in the shredded cheddar cheese and sugar-free maple syrup. Mix until just combined; remember, overmixing can lead to tough bites.
  5. Spoon the batter into each muffin cup, filling them about 3/4 full to allow for rise without spilling.
  6. Bake for 18-23 minutes, or until golden brown. A toothpick inserted in the center should come out clean.
  7. Allow the bites to cool in the pan for about 5 minutes before removing them to prevent them from falling apart.

Notes

These bites can be served warm with sugar-free maple syrup or hot sauce. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
