Delicious and filling protein-packed snacks perfect for breakfast or brunch, combining sausage and pancake flavors.

Ingredients

  • 1 lb breakfast sausage (cooked and cooled)
  • 2 cups protein pancake mix
  • 1.5 cups water
  • 1/4 cup sugar-free maple syrup
  • 1 cup shredded cheddar cheese (sharp cheddar preferred)

Instructions

  1. Preheat your oven to 400°F (175°C).
  2. Lightly grease a 12-cup muffin tin with cooking spray or butter.
  3. Combine the pancake mix and water in a large mixing bowl according to package instructions until smooth.
  4. Fold in the cooled breakfast sausage into the batter to avoid warming it up.
  5. Add the shredded cheddar cheese and sugar-free maple syrup, stirring until just combined.
  6. Spoon the mixture into each muffin cup, filling them about 3/4 full.
  7. Bake for 18-23 minutes, or until they turn golden brown.
  8. Let them cool in the pan for about 5 minutes before removing.

Notes

Serve warm with additional sugar-free maple syrup. Leftovers can be stored in the refrigerator for up to 5 days or frozen for 3 months. Reheat in the microwave or oven.
