  • 24 ounces boneless skinless chicken breasts (about 4 (6-ounce) pieces)
  • 1/2 cup light mayonnaise
  • 3/4 cup Parmesan cheese, shredded
  • 1 1/2 cups Panko bread crumbs
  • 1 teaspoon dried oregano, ground
  • 1 teaspoon dried basil, ground
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the light mayonnaise, Parmesan cheese, oregano, basil, salt, and black pepper in a medium bowl. Mix until everything is well-blended.
  3. Coat each chicken breast generously with the mayonnaise mixture, ensuring every inch is covered.
  4. Dredge the coated chicken in Panko breadcrumbs, making sure they are thoroughly coated.
  5. Place the breaded chicken pieces on a baking sheet lined with parchment paper.
  6. Bake for about 25-30 minutes, until the chicken is cooked through and the coating turns golden brown.
  7. Spoon 1/4 cup of marinara sauce over each piece after baking.
  8. Sprinkle the shredded mozzarella cheese evenly on top of the sauce.
  9. Return to the oven and bake for an additional 5-10 minutes, until the cheese melts and is bubbly.
  10. Let it cool slightly before serving.

Notes

For a richer flavor, swap the light mayonnaise for a full-fat version. Adding sautéed spinach or mushrooms to the marinara can enhance flavor and nutrition.
