Delicious and convenient breakfast burritos that can be prepared in advance and frozen for busy mornings.

  • 8 large flour tortillas
  • 1 pound breakfast sausage (or plant-based alternative)
  • 8 large eggs
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Optional: hot sauce or salsa for serving

Instructions

  1. Cook the breakfast sausage in a large skillet over medium heat until browned and cooked through. Drain excess fat and set aside.
  2. Add the diced bell pepper and onion to the skillet, sautéing for about 3-4 minutes until tender.
  3. Whisk together eggs, salt, and pepper in a bowl. Pour into the skillet with veggies and cook until eggs are set.
  4. Lay out tortillas on a clean surface and distribute the cooked sausage, scrambled eggs, and cheese evenly.
  5. Fold the sides of the tortilla and roll tightly from the bottom up, ensuring they are well-sealed.
  6. Place the burritos on a baking sheet lined with parchment and flash freeze for about an hour.
  7. Wrap each burrito in foil or plastic wrap and store them in a freezer-safe bag.

Notes

These burritos can be kept in the freezer for up to three months. Reheat directly from the freezer for a quick meal.
