Homemade One Skillet Salmon with Lemon Orzo

A delightful one-skillet dish combining tender salmon and lemony orzo for a quick weeknight meal.

Ingredients

  • 4 salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable or chicken broth
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Season the salmon fillets with salt and pepper. Place them skin side down in the skillet. Cook for about 4–5 minutes per side or until fully cooked. When done, remove the fillets from the skillet and set aside.
  3. In the same skillet, add the minced garlic. Sauté it for about 30 seconds until it becomes fragrant.
  4. Pour in the broth and lemon juice, and bring the mixture to a boil.
  5. Stir in the orzo and lemon zest. Reduce the heat and allow it to simmer for approximately 10 minutes, or until the orzo is tender and most of the liquid has absorbed.
  6. Flake the cooked salmon and gently fold it back into the mixture.
  7. Garnish with fresh parsley before serving it hot.

Notes

For a gluten-free option, substitute orzo with quinoa or rice. Adjust the garlic to your preference.
