A comforting meal featuring tender honey BBQ chicken paired with creamy, garlicky Parmesan potatoes, perfect for family dinners.

  • 4 chicken thighs
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 4 medium potatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the honey and BBQ sauce until well blended.
  3. Coat each chicken thigh with the honey BBQ mixture, placing them in a baking dish.
  4. Bake the chicken in the preheated oven for 30-35 minutes or until cooked through and juices run clear.
  5. As the chicken bakes, bring a pot of salted water to a boil. Add the diced potatoes and cook for about 15 minutes, or until tender.
  6. Once the potatoes are tender, drain them and return them to the pot. Add the butter, minced garlic, salt, and pepper, then mash until creamy.
  7. Stir the grated Parmesan cheese into the mashed potatoes until well combined and creamy.
  8. Serve the honey BBQ chicken alongside the garlic Parmesan potatoes, garnished with fresh parsley.

Notes

For extra crunch, consider broiling the chicken for the last few minutes of cooking.
