  • 1 cup honey BBQ sauce
  • 4 large potatoes
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. Brush the chicken with honey BBQ sauce, ensuring it’s well-coated.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and reaches an internal temperature of 165°F (75°C).
  5. While the chicken is grilling, wash and peel the potatoes, then cut them into even cubes.
  6. In a bowl, toss the cubed potatoes with olive oil, minced garlic, salt, and pepper to taste.
  7. Transfer the seasoned potatoes to a baking dish, then sprinkle with grated Parmesan cheese.
  8. Bake in the oven at 400°F (200°C) for 25-30 minutes or until the potatoes are golden brown and crispy.
  9. Serve the grilled chicken alongside the cheesy garlic Parmesan potatoes. Garnish with fresh parsley if desired.

Notes

For best results, marinate the chicken in BBQ sauce for a few hours prior to grilling. Uniform potato cubes ensure even cooking.
