Honey BBQ Chicken with Garlic Potatoes

A delightful dish featuring succulent chicken glazed with honey BBQ sauce and paired with garlicky roasted potatoes, perfect for any gathering.

  • 46 chicken thighs or breasts (skin-on for extra crispiness)
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil (for searing)
  • ⅓ cup honey
  • ½ cup BBQ sauce (store-bought or homemade)
  • 1.5 pounds baby potatoes or Yukon Gold potatoes, washed and halved
  • 34 garlic cloves, minced
  • 2 tablespoons olive oil
  • Fresh parsley, chopped

Instructions

  1. Wash and halve the baby potatoes. In a mixing bowl, combine them with 2 tablespoons of olive oil, minced garlic, salt, pepper, and 1 teaspoon of smoked paprika. Toss to coat evenly, and then spread the potatoes out on a baking sheet.
  2. Pat the chicken thighs or breasts dry with a paper towel. Season both sides generously with salt, pepper, and smoked paprika.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once hot, add the chicken skin-side down. Sear for about 6-8 minutes until golden brown.
  4. In a small bowl, whisk together the honey and BBQ sauce until well combined.
  5. Transfer the seared chicken to the baking sheet with the potatoes. Brush a generous amount of the honey BBQ glaze over the chicken pieces.
  6. Roast everything in a preheated oven at 400°F (200°C) for 25-30 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the potatoes should be tender and golden. For added flavor, brush more honey BBQ glaze on the chicken during the last 5 minutes of roasting.
  7. Once done, sprinkle fresh parsley over the dish before serving.

Notes

Make sure to dry the chicken well before seasoning to achieve that perfect crispy skin during searing. Adjust the sweetness of the glaze by adding more or less honey according to taste.
