  • 1 cup rolled oats
  • 1 cup warm milk (240 ml)
  • 2 teaspoons active dry yeast
  • 1/4 cup warm water (60 ml)
  • 1/4 cup honey (60 ml)
  • 1/4 cup melted butter (60 ml)
  • 3 cups all-purpose flour (375 g)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Mix 1 cup of rolled oats with 1 cup (240 ml) of warm milk. Let it sit for 10 minutes to soften.
  2. Dissolve 2 teaspoons of active dry yeast in 1/4 cup (60 ml) of warm water. Stir in 1 tablespoon of honey and let it bubble for 5-10 minutes.
  3. Combine the softened oats with the yeast mixture, adding 1/4 cup (60 ml) of melted butter and the remaining 1/4 cup (60 ml) of honey. Mix until well combined.
  4. Incorporate 3 cups (375 g) of all-purpose flour, 1 teaspoon of cinnamon, and 1/2 teaspoon of salt until a shaggy dough forms.
  5. Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  6. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for 1-1.5 hours, or until it has doubled in size.
  7. Punch down the risen dough and shape it into a log. Position it in a greased loaf pan and allow it to rise again for 30-40 minutes.
  8. Preheat your oven to 375°F (190°C). Bake the bread for 30-35 minutes, or until it is golden brown and sounds hollow when tapped.
  9. Remove the bread from the pan and cool on a wire rack before slicing.

Store at room temperature in an airtight container for up to three days or freeze slices for longer storage.
