  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Generously season the chicken pieces with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken and cook until it’s nicely browned and cooked through, about 5-7 minutes. Set the chicken aside.
  4. Lower the heat to medium. In the same skillet, combine honey, soy sauce, minced garlic, rice vinegar, grated ginger, and red pepper flakes (if using). Stir constantly as the mixture simmers gently.
  5. Once it starts simmering, whisk the cornstarch slurry and pour it into the sauce, stirring continuously until it thickens and becomes a shiny glaze (1-2 minutes).
  6. Return the cooked chicken to the skillet. Quickly toss to coat every piece with the sticky glaze.
  7. Cook for an additional minute until the chicken is hot.
  8. Remove from heat, garnish with sesame seeds and chopped green onions, then serve immediately.
