A flavorful weeknight dish combining tender chicken thighs with a sweet and savory honey garlic sauce.

  • 8 chicken thighs (skinless and boneless, ~2 lbs)
  • 2 tbsp cornflour (cornstarch)
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 110 g (1/3 cup) honey
  • 80 ml (1/3 cup) chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp fresh parsley (finely chopped, for garnish)
  • ½ tsp chili flakes (optional)
  • Boiled rice (for serving)

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure a nice sear.
  2. In a large bowl, toss the chicken with cornflour, salt, and pepper until evenly coated.
  3. In a pan over medium-high heat, add vegetable oil and butter.
  4. Sear the chicken thighs for about 5-6 minutes on each side until they are golden brown and cooked through.
  5. Remove the chicken and set aside. In the same pan, add minced garlic and sauté until fragrant.
  6. Pour in the honey, chicken stock, rice vinegar, and soy sauce. Stir well to combine.
  7. Return the chicken to the pan, coating it with the sauce, and cook for an additional 2-3 minutes.
  8. Garnish with chopped parsley and chili flakes if you like a bit of heat.

Notes

Serve with fluffy boiled rice to soak up the sauce. Best enjoyed fresh, but leftovers can be stored for up to 3 days in the refrigerator.
