  • 1 cup White Rice
  • 2 pieces Ripe Avocados
  • 1/4 cup Honey
  • 3 tablespoons Lime Juice
  • 2 tablespoons Soy Sauce
  • 1/2 cup Red Onion
  • 1/4 cup Fresh Herbs (Cilantro/Parsley)
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil
  • 1/4 cup Honey Lime Glaze

Instructions

  1. Start by cooking the rice according to package instructions.
  2. While the rice cooks, prepare the chicken by combining honey, lime juice, soy sauce, and black pepper in a bowl.
  3. Coat the chicken breasts in the marinade.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Add the marinated chicken once the oil is hot. Cook for about 6-7 minutes on each side until golden brown.
  6. Remove the chicken from the skillet and let it rest before slicing.
  7. Sauté diced red onion in the same skillet for about 3-4 minutes.
  8. Slice the avocados and layer the cooked rice, sautéed onions, sliced chicken, and avocados in a bowl.
  9. Drizzle the honey lime glaze over the top and garnish with fresh herbs before serving.
