A delightful combination of crispy chicken and fluffy biscuits drizzled with spicy hot honey, perfect for brunch or dinner.

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup buttermilk
  • 2 large boneless, skinless chicken breasts
  • 1 cup buttermilk (for marinating)
  • 1 cup hot honey sauce
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, soak the chicken breasts in 1 cup of buttermilk. Let them marinate for at least 1 hour.
  2. Preheat the oven to 425°F (220°C).
  3. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add 3/4 cup of buttermilk, mixing to form a dough.
  4. Turn the dough out onto a floured surface, knead gently, and roll it to about 1 inch thick. Cut out rounds using a biscuit cutter.
  5. Arrange the biscuits on a baking sheet and bake for 12-15 minutes, until golden brown.
  6. In a frying pan over medium heat, warm oil. Remove the chicken from marinade, season with salt and pepper, and fry until golden brown and cooked through.
  7. Drizzle the hot honey sauce over each piece of crispy chicken just before serving.
  8. Assemble the dish by placing the fried chicken between the halves of a biscuit and drizzling with more hot honey if desired.

Notes

Add crunchy pickle slices for extra flavor and pair with coleslaw or cucumber salad.
