A delightful fusion of flavors featuring juicy chicken, roasted vegetables, and a sweet and spicy hot honey sauce, perfect for busy weeknight dinners.

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • ⅓ cup honey
  • 12 tablespoons hot sauce (adjust to your spice level)
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon crushed red pepper flakes (optional, for extra heat)
  • 2 cups cooked rice (white, brown, jasmine, or cauliflower rice)
  • 1 cup roasted broccoli
  • 1 cup roasted sweet potatoes or carrots
  • ½ avocado, sliced
  • ¼ cup pickled red onions (optional)
  • Greek yogurt or sour cream, for drizzling
  • Fresh cilantro or green onions, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, then season with garlic powder, smoked paprika, onion powder, salt, and pepper. Sauté until the chicken is golden brown and fully cooked, about 6-8 minutes. Remove from heat and set aside.
  2. In a small saucepan, combine honey, hot sauce, apple cider vinegar, and crushed red pepper flakes (if using). Warm over low heat until slightly thinned. Pour half of this mixture over the cooked chicken and toss to coat, reserving the rest.
  3. In each bowl, layer cooked rice, roasted vegetables, and the hot honey chicken. Top with sliced avocado, pickled onions, and a drizzle of yogurt or sour cream. Finish with the reserved hot honey sauce and sprinkle with fresh herbs.
  4. Dig in while warm and savor the delightful combination of sweet and spicy flavors.
