Tender chicken breasts enveloping a creamy, cheesy filling that warms the soul. Perfect for weeknight dinners or impressing guests.

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the chopped spinach, softened cream cheese, shredded mozzarella, grated Parmesan, minced garlic, Italian seasoning, and a pinch of salt and pepper in a mixing bowl. Mix until well blended.
  3. Carefully cut a pocket into each chicken breast, being cautious not to slice all the way through.
  4. Fill the pockets generously with the cheese mixture. Secure the filling as best as you can.
  5. Heat a drizzle of olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until they turn a lovely golden brown.
  6. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until the chicken is cooked through.
  7. Allow the chicken to rest for a few minutes before slicing and serving for maximum juiciness.

Notes

For best results, reheat in the oven rather than the microwave to keep the chicken crispy on the outside and moist inside.
