  • 2 pounds Chicken Breast (can be substituted with turkey or eggplant)
  • 1 cup Breadcrumbs (gluten-free for a gluten-free version)
  • 1/2 cup Parmesan Cheese (freshly grated)
  • 1 cup Mozzarella Cheese (low-fat option available)
  • 2 cups Marinara Sauce (spicy marinara for a kick)
  • 1 spray Cooking Spray

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly coat a baking dish with cooking spray.
  3. Gently tenderize the chicken breasts and season them with salt and pepper.
  4. In a bowl, mix the breadcrumbs with half of the grated Parmesan cheese.
  5. Dip each chicken breast into the breadcrumb mixture, ensuring they are evenly coated.
  6. Place the coated chicken breasts in the baking dish, leaving space between each piece.
  7. Spoon the marinara sauce over the chicken evenly.
  8. Sprinkle mozzarella cheese and the remaining Parmesan cheese on top.
