  • 2 cups Baby Spinach (Finely chopped; kale can be substituted)
  • 1 cup Shredded Mozzarella Cheese (Feta for a tangier flavor)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the cottage cheese, olive oil, and egg (or the flaxseed mixture) in a large mixing bowl.
  3. Whisk together the all-purpose flour, baking powder, and salt in a separate bowl.
