Delicious and nutritious bagels made with cottage cheese and spinach, perfect for breakfast or a quick snack.

  • 1 cup Cottage Cheese
  • 2 tablespoons Olive Oil
  • 1 large Egg
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 2 cups Baby Spinach, chopped
  • 1 cup Shredded Mozzarella Cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, olive oil, and egg. Blend until smooth.
  3. In another bowl, whisk the flour, baking powder, and salt together.
  4. Gradually combine the dry ingredients into the wet mixture, stirring gently until just mixed.
  5. Fold in the chopped spinach and mozzarella cheese until evenly distributed throughout the dough.
  6. Shape the mixture into about 8 bagels.
  7. Space the bagels evenly on the prepared baking sheet and bake for 20–25 minutes until they are golden brown.
  8. Remove from the oven and allow to cool slightly before serving.

Notes

For a dairy-free alternative, use silken tofu instead of cottage cheese, and swap the egg with a flaxseed mixture or your favorite egg substitute.
