  • 1 lb Boneless, Skinless Chicken Breasts or Thighs
  • 1/4 cup Cornstarch
  • 1 piece Egg White
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Vegetable Oil
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Garlic, minced
  • 1 tablespoon Ginger, minced
  • 23 Dried Red Chilies or Crushed Red Pepper Flakes
  • 1/2 cup Tomato Ketchup
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Chili Garlic Sauce
  • 1 tablespoon Vinegar
  • 1 tablespoon Sugar or Honey
  • 1/4 cup Water
  • Sliced Green Onions
  • Toasted Sesame Seeds
  • Thin Strips of Fried Onion or Bell Pepper

Instructions

  1. In a mixing bowl, combine cornstarch, egg white, salt, and black pepper. Thoroughly coat the chicken pieces and let them marinate for about 15 minutes.
  2. In another bowl, mix the tomato ketchup, soy sauce, chili garlic sauce, vinegar, sugar or honey, and water until well combined. Set this mixture aside.
  3. In a large pan, heat vegetable oil over medium-high heat. Fry the marinated chicken until it turns golden and crispy, approximately 5-7 minutes. Once done, remove the chicken and drain it on paper towels.
  4. Using the same pan, add sesame oil. Sauté the minced garlic and ginger until fragrant. Then, toss in the dried red chilies.
  5. Return the fried chicken to the pan, adding the sauce mixture. Stir-fry everything together for about 2-3 minutes, ensuring the chicken is well-coated and heated through.
  6. Plate your dragon chicken, garnishing it with sliced green onions, toasted sesame seeds, and crispy onion or bell pepper strips for that added crunch.

Notes

Let the chicken rest after frying to retain its crispiness. Adjust spice levels according to preference, and don’t rush the frying process.
