A delightful twist on the classic Chinese favorite, Keto Orange Chicken offers vibrant zest coupled with crunchy fried chicken, perfect for a comforting dinner.

  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1/2 cup almond flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut oil (for frying)
  • 1/2 cup orange juice (freshly squeezed)
  • 2 tbsp soy sauce or tamari (for a gluten-free option)
  • 1 tbsp apple cider vinegar
  • 12 tbsp erythritol sweetener (adjust to taste)
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1 tsp sesame seeds (for garnish)
  • Green onions (for garnish)

Instructions

  1. In a large bowl, mix together the almond flour, salt, and black pepper. Dredge each piece of chicken in this mixture, ensuring it’s fully coated.
  2. Heat coconut oil in a skillet over medium-high heat. Fry the chicken in batches until they turn golden brown and are cooked through, then set aside.
  3. In another pan, combine the freshly squeezed orange juice, soy sauce, apple cider vinegar, erythritol, garlic powder, and ginger powder. Cook on medium heat until the sauce thickens slightly.
  4. Return the fried chicken to the sauce in the pan, tossing to coat each piece evenly.
  5. Serve immediately, garnished with sesame seeds and chopped green onions.

Notes

Serve over cauliflower rice or with steamed broccoli for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
