A fresh and zesty breakfast option that combines oats with the lightness of lemon for a nutritious start to your day.

Ingredients

  • 1/2 cup oats
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp sweetener (or sugar)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder
  • 2 tbsp Greek yogurt
  • 1 tbsp sweetener or sugar
  • 1 tbsp lemon juice

Instructions

  1. Begin by adding all the ingredients into a blender. Blend for about 30 seconds or until smooth and well combined.
  2. Pour the mixture into a greased ramekin or a small baking dish of your choice.
  3. Place the dish in your air fryer basket and set it to cook at 175°C (350°F) for 8 to 10 minutes, or until cooked through.
  4. While the oats are baking, mix together the Greek yogurt, lemon juice, and your choice of sweetener in a small bowl to create the glaze.
  5. Once the baking is complete, carefully remove the dish from the air fryer. Top the warm oats with the lemon yogurt glaze before serving.

Notes

Serve with fresh berries or extra Greek yogurt for an enhanced experience. Store leftovers in an airtight container for up to three days.
